Although Thandai is made from sugar, full fat milk, almonds and other essential ingredients, which makes it a high calorie coolant. Let me share a low calorie Thandai recipe:

Ingredients for serving 2 to 3 people:

  • 2 spoons grated jaggery in powdered form
  • 3 cup toned milk
  • 2 saffron strands
  • 2 to 3 kalimirch (black pepper)
  • Now, make a fine powder of below mentioned ingredients
  • 8 to 10 roasted almonds
  • 2 teaspoons khus-khus (poppy seeds)
  • 2 teaspoons saunf (fennel seeds)
  • A pinch of elaichi (cardamom) powder
  • 2 to 3 white peppercorns

How to prepare:

Take a pan and heat the milk. As it starts to boil, add powdered jaggery and simultaneously keep boiling the milk until it’s completely dissolved. Once it’s done, keep the milk aside for cooling. Now, add the above mentioned ingredients in powder form and mix well. Place the mixture in the refrigerator for 3 to 4 hours, so that the flavor gets enhanced and have time to seep in. Take a filter and strain the mixture, now add peppercorns and saffron. Mix it properly and serve chilled (avoid putting ice as it will reduce the thickness).
